Turning point is a term you will come across in every coffee roasting. After you load the cold coffee into your hot roaster, the internal temperature will rapidly decrease. The gas burner or heat elements in your machine will then work this temperature back up. The point at which the temperature changes from a decrease back to an increase is called the turning point. So from here, the temperature starts climbing again.
